Walk-ins are welcome, reservations are preferred to guarantee availability. We are now open Thursday-Saturday from 11 am – 8 pm and Sunday-Monday from 11 am – 5 pm.

THE STORY

After 15 years of planning and preparation, Nova and Brian fulfilled their dream and established a vineyard in the Finger Lakes and a tasting room in Geneva, NY. Aided by family with a focus on quality over quantity.

Ever since Nova and Brian met in 2000, they knew they had something special. Both are driven, passionate, and thirsty for knowledge.

Trestle 31 specializes in Riesling, Chardonnay, and Cabernet Franc. We have two versions of Riesling, a Dry Riesling and a Demi-Sec (off-dry) Riesling. We offer both a Rose and Red Cabernet Franc. In 2026, we introduced our first Pinot Noir!

We also make special one-off wines each year, as part of our Study Sketch series. These unique wines are made in small batches, and no two wines are ever the same. Find all of our wines here.

Trestle Thirty One wines are unique in their complexity. We strive to take what nature has given us and enhance it by having an active hand in the vinting process. Through various techniques and interventions, we seek to add layers of depth and character to the stunning fruit provided by the region.

For example, our Rieslings have extended cold-soak prior to pressing, allowing for a limited amount of tannin extraction to create a more textured feel. Additionally, we have started incorporating the use of acacia wood barrels to add unique flavors to the wine.

Both our Rieslings and our Chardonnays also spend extended time on lees, adding a richness to the mouthfeel. On top of that, much of the wine spends time in barrel, further imparting complexity to the wine.

Lastly, we intentionally cellar most of our finished wine for at least a year to allow for the acid to integrate into the wine, bringing balance that is often missed when Finger Lakes wines are served too young.

Yes. We currently do not use any animal based processing aids. This is subject to change based on the needs of future vintages, so it is best to inquire.

Yes, we offer two different wine club experiences:

Trestle Legacy Club – The Legacy club is a subscription club format, where individuals purchase a case of wine once a year. To retain membership, you must purchase an additional case each year.

Trestle Table Club – Our Table club is an allocation club format, where we curate three 3 bottle shipments a year. These shipments are allocated in March, August, and November.

With both clubs, members have the ability to modify and add to their wine club shipment. Both clubs also offer various membership perks. For more information, please visit our wine club page here.

Trestle 31 offers various experiences throughout the year. Out of our Tasting Lounge, we offer year-round tastings and glass pours. During the summer months, we will be hosting Evening Aperitivos, live music, special events, and food trucks. Additionally, we host both private events and private tastings in our Tasting Lounge and off-site.

Yes, well tempered dogs are allowed at our Tasting Lounge in Geneva, NY.

While we do not have a full kitchen, we do offer cheese and charcuterie boards at our Tasting Lounge. Individuals are also welcome to bring in their own food to enjoy with our wines.
